How to make potato pancakes at home?
For two servings of potato pancakes, you will need 4-5 medium-sized potatoes,
Take the potatoes, peel them and wash them well under hot water, then rinse them under cold water.
Take a medium coarse grater and grate the potatoes through it into a separate container.
Take another container in which we will put the mass of grated potatoes. Before placing the mass of grated potatoes in a separate container, drain all the potatoes. You can do this by forming balls of blueberry mass in your palms and pressing them firmly. This will remove most of the water from the potatoes.
So drain the potatoes and put them in a dry container.
Grate half a medium-sized onion into the container in which you put the drained potato mass. Use a white onion, be sure to peel it and wash it well first.
Grate the onion directly on the potatoes.
Add 1 tsp salt, 1/2 tsp freshly ground black pepper and 1.5 tbsp white wheat flour to the container where you put the potato mass and grated half of the onion.
Also beat in one medium-sized egg.
Mix everything very well. Use a fork and spoon to mix. Mix until the egg and flour are evenly distributed with the grated potatoes.
When you have mixed the potato mass, get ready to cook the pancakes.
Take a medium-sized frying pan and place it on a medium-hot hob.
When the pan is hot, add vegetable oil to it. Pour enough oil to completely cover the bottom of the pan. Pancakes must be half-immersed in oil to cook well, so there must be enough oil.
When the oil in the pan is hot, use your hands to form pancakes of the desired size.
It is best to form balls of the potato mass that can fit in a handful and then form them into pancakes.
Place the formed pancakes in the pan and cook on medium heat for about 8-10 minutes (cook each side for 4-5 minutes).
Do not forget that the pan should not be heated to maximum heat, because the pancakes will stick.
In order to cook pancakes perfectly, the temperature must be medium and there must be a sufficient amount of vegetable oil.
So, when the pancakes are sufficiently cooked, remove them from the pan.
Before serving the pancakes to eat, keep them on a paper napkin for a few minutes. The paper from the pancakes will absorb the excess fat that the pancakes get while baking. So the pancakes will be drier and not as greasy as they are just taken out of the pan.
While the pancakes are cooling, let's prepare the sauce.
The sauce is very simple.
Take a sprig of fresh dill, wash it well under hot water and rinse under cold water.
Chop the dill on a cutting board.
Also take sour cream.
Put the pancakes on a plate, pour sour cream next to the pancakes and sprinkle everything with dill.
That's it, we made very tasty potato pancakes.
It was simple, wasn't it? Enjoy!

When making potato pancakes, you may have the following questions:
How do you keep potato pancakes crispy?
If you want the pancakes to be very crispy, add a little more flour to the mass of grated potatoes and bake the pancakes on a slightly higher heat. However, do not cook the pancakes on maximum heat, as the pancakes may become soggy. You will make the best pancakes if you make them according to the Cookestro recipe.
How do you keep potato pancakes from falling apart?
To keep potato pancakes from falling apart we use flour. Flour gives resistance to the mass of grated potatoes, so that it does not stick together into one mass. By using wheat flour, you can form pancakes in any size and shape you want.
Why are my potato pancakes not crispy?
If your pancakes are not crispy enough, it means that your pancake batter is too watery. So, first you need to drain the mass of grated potatoes well enough and try to remove as much water as possible. Also use flour and mix it with the potato mass. Also, fry the pancakes in oil at a slightly higher than average temperature. This way your pancakes will be really crispy and tasty.
What is the best oil for potato pancakes?
The most suitable oil for cooking any pancakes is vegetable oil. Vegetable oil can be heated to a sufficiently high temperature and the pancakes baked in it will not stick. If you use olive oil, be aware that it is not the most suitable oil for frying pancakes. For cooking, we recommend choosing vegetable, coconut or sunflower oil.
