How to make Crispy Potato Croquettes at home?
In this recipe, we will make potato croquettes for 1-2 people. So, if you want to make this dish for a larger group of people, use the appropriate amount of ingredients.
Take 3 medium sized potatoes. Peel the potatoes and wash well under hot water. After that, rinse the potatoes under cold water and place them on a cutting board.
Cut the potatoes into small cubes and add them to the cooking pot.
Fill the pot with the potatoes with enough water to completely cover the potatoes. But don't add too much water. We don't want the potatoes to get too watery.
Also add 1 tsp of salt to the pot and mix it in the water.
Place the pot with the potatoes on a medium-hot stovetop. Boil the potatoes for about 15 minutes on medium heat.
While the potatoes are boiling, take a medium-sized sprig of parsley. Wash the parsley well under hot water and rinse under cold water.
Chop the parsley on a cutting board and set aside for later use.
Remove the boiled potatoes from the pot. Use a colander to drain all the water from the potatoes.
Place the drained potatoes in a bowl large enough to comfortably mash the potatoes.
Mash the potatoes in a mortar. Rub until they turn into a thick mass.
Pour 1 tsp of salt and some freshly ground black pepper over the potato mixture. If you want the croquettes to be spicy, you can add 1/2 tsp of hot pepper seasoning.
Also pour 2 tbsp of white wheat flour into the container with the potatoes.
Mix the potato mass well with spices and flour. You can use the same pestle or just a fork for mixing.
While stirring the potatoes, add the chopped parsley little by little to the same container. Stir more. Parsley should be evenly distributed throughout the potato mass.
When you mix potatoes with spices, flour and parsley, you will get a sticky mass from which you will need to form potato croquettes.
To make the mass more dense, you can knead it with your hands on a food cutting board. If you see that the potato mass is too wet and not sticky, sprinkle it with 1-2 tsp of flour and knead it longer.
When your potato mixture is sufficiently sticky and smooth, place it on a cutting board.
Divide the potato mass into 4 equal parts. Use a knife for this.
Form oblong parts from each part. Do it by hand.
Meanwhile, take a separate small container. Add 8 tbsp of dried fruit, 1 tbsp of hard grated cheese and 1 tsp of dried basil to the bowl. Mix everything well.
Take another small bowl and beat 1-2 eggs into it. Beat the eggs with a fork so that the egg yolk is completely mixed with the white.
Take a medium-sized frying pan and place it on a medium-hot hob. Add vegetable oil to the pan. Pour enough oil to half cover the potato croquettes.
Cut the formed slices of potato mass into equal parts so that you can form one potato croquette from them.
Form the pieces of potato mass into balls the size of a grapevine.
Place each ball of the potato mass first in the container with the egg so that the egg covers the entire surface of the ball. Then roll the balls in breadcrumbs and place them in a heated pan.
Fry each side of a ball for 3 minutes, turning them constantly.
Place the baked potato croquettes on paper. We use paper to remove excess fat from potato croquettes and make them crispier.
Place the slightly dried potato croquettes on a plate.
Pour sour cream or Greek yogurt on the potato croquettes and sprinkle everything with chopped dill or parsley.
